Our award winning butchers counter stocks a wide selection of fresh and local meats.
With three on site butchers we use traditional methods to prepare all our own hand made sausages and burgers.
All our meat is fully traceable and comes from British breeds that thrive on their native landscape, customers return to us time and time again for the quality and satisfaction of knowing where their meat comes from.
Our Wellington Hereford Beef is naturally fattened on the Estate's water meadows surrounding the Farm Shop. Butchered and hung onsite for a minimum of 21 days to allow the full flavour and tenderness to develop.
Our lamb comes from the Estate's Welsh Black Mountain flock, which are allowed to mature slowly, to ensure optimum meat quality. When the estate cannot provide us with lamb we source from other local farms, selecting those with only the best quality.
We use only Free Range pork and poultry and have a keen focus on food miles, so source as local as we can, however this can be difficult when free range is paramount. So we would rather look further afield and maintain the standard of welfare and flavour we require.
When in season we also have Wellington Estate game available, such as Venison, Pheasant and Grouse.
